Set in the heart of downtown Vancouver, Thierry was designed as a retreat for shoppers, visitors and working professionals alike. The cafe offers indoor seating with a direct view into Chef Thierry’s busy pastry kitchen, as well as a popular year-round heated patio. The interior features curved palmwood walls, a lace-patterned ceiling, and iconic Thonet bentwood café chairs, first introduced at the Paris Universal Exposition of 1867. Above, ‘Castore’ lamps designed by Michele De Lucchi and Huub Ubbens appear to drip out of the ceiling.

Recognized by Vancouver Magazine as one of the city’s best coffee houses, Chef Thierry offers his very own blend of espresso – while our expert baristas can concoct everything from spiked coffees to flavoured lattes.

Chef Thierry Busset

Born in Auvergne, maitre artisan Chocolatier and Patissier Chef Thierry Busset honed his craft at the hands of the masters, including notable chocolatier Bernard Sicard in Auvergne and later at Pilati Patisserie in the Loire Valley. He was pastry chef to a trio of three-star Michelin restaurants in London: Le Gavroche (Albert Roux and Michel Roux Jr.), The Restaurant Marco Pierre White, and The Oak Room (Marco Pierre White). A lasting legend in many European pastry kitchens, his former colleague Chef Gordon Ramsay called him “one of the finest pastry chefs in the world.”

Upon moving to Vancouver, Chef Thierry led the pastry programs at two of Thierry Cafe’s sister venues, CinCin Ristorante + Bar and West Restaurant + Bar, with an innovative approach to desserts, chocolates, and breads. “Widely regarded as one of North America’s finest pastry chefs” by notable publications like Vancouver Magazine, Chef Thierry focused the experience he gained from his multiple award-winning successes with Toptable Group to open Thierry Cafe where he shares his dream of showcasing art through the science of patisserie.

My name is Jose Ruben Hernandez Rodriguez, over the last 30 years I have worked for the communications industry in my hometown. I´m a lover and passionate about moving images, I started my career in the early 90's in Radiopolis for a radio station WFM 96.9 as a promo producer, Televisa San Angel within the Quality Control Coordination and as 1AD of Betty Sheridan, who was an important TV Director. In 1997 I started my own company; EnMedio (first communication agency in Mexico) in which I participated as Creative Director and Producer for at least 14 years, implementing successful communications and marketing campaigns for important companies. Since 2007 I am a partner of BF Digital (Boyler Films SC) and Collector Media Makers, working as a video producer, mainly focusing in communications, public relations and marketing areas for different brands-products and companies in Mexico. In 2018 I had the opportunity to work in the documentary Ayotzinapa, el paso de la Tortuga, currently in Netflix, as a post-production supervisor under the production of Bertha Navarro and three-time Academy Award-winning Guillermo del Toro. With this wonderful experience I discovered the importance of documentary filmmaking and that is why I came to study in Vancouver. In September 2023 I graduated from Film Production Program (Diploma) at InFocus Film School. With the aim of expanding my graphics skills, I am currently studying Graphic Design Diploma at VCC Goal.
